Atayef (Middle Eastern Pancakes)

instant yeast flour fine semolina sugar  salt water baking soda orange blossom water (optional)

Ingredients

Whisk together the yeast, flour, semolina, sugar and salt.

Pour lukewarm water in 4-5 additions, whisking in-between.

Add the orange blossom water (if using) and whisk just until smooth.

Cover and let it rest in a warm place for 60-90 minutes, or until bubbly.

Dissolve the baking soda in water and add to the atayef batter.

Pour 1-2 tablespoons of batter onto a hot pan.

Remove from the heat as soon as there are no more wet spots left. Don’t flip it.

Place the atayef in a single layer and cover with a kitchen towel.
