Banana Pastry Cream

Ingredients

butter  bananas heavy cream  milk  sugar egg yolks salt cornstarch  vanilla extract

STEP 1

Cook the sliced bananas with butter until softened.

STEP 2

Add the heavy cream and milk then bring to a simmer.

STEP 3

Cover and set aside to infuse the liquid with banana flavor. Strain through a fine mesh sieve.

STEP 4

Heat the banana flavored liquid. Whisk the egg yolks, sugar and salt in a bowl.

STEP 5

Whisk in the cornstarch then gradually pour the hot liquid over the egg mixture.

STEP 6

Return to the saucepan and cook until thickened.

STEP 7

Add the butter and vanilla extract. Whisk until completely smooth and enjoy!
