Caramel Ganache

Ingredients

sugar  butter heavy cream  white (or dark) chocolate  honey  salt

STEP 1

Cook the sugar until it has melted and turned amber. Then off the heat, mix in the butter.

STEP 2

Slowly pour in the heavy cream, stirring constantly to avoid lumps. Set aside.

STEP 3

Heat the heavy cream and honey. Gradually pour over melted chocolate, stirring until combined. 

STEP 4

Pour the caramel sauce over the chocolate ganache and stir to combine. Add a pinch of salt.

STEP 5

If you'd like to make whipped caramel ganache, mix in cold heavy cream. Chill.

STEP 6

Mix for about 2 minutes or until fluffy and just firm enough to pipe. Use as desired.

Caramel ganache is a delicious addition to countless desserts! Whip it into a wonderfully airy frosting to top cupcakes or use it as a filling for choux pastry.
