Caramel Cremeux

Ingredients

sugar heavy cream gelatin sheets egg yolks milk  salt

STEP 1

Pour the sugar evenly in a saucepan. Cook until it turns amber.

STEP 2

Off the heat, gradually pour hot heavy cream on the caramel, stirring immediately to combine.

STEP 3

Soak the gelatin in cold water. Meanwhile briefly whisk the egg yolks in a bowl.

STEP 4

Gradually pour hot milk over the egg yolks, whisking constantly.

STEP 5

Slowly add the caramel sauce then return the mixture to the saucepan.

STEP 6

Cook until thick enough to coat the back of a spoon.

STEP 7

Add the gelatin and salt. Use as desired. I used it to make chocolate caramel tarts.
