Chocolate Ice Cream

Ingredients

egg yolks heavy cream  milk cocoa powder semi-sweet chocolate sugar salt

STEP 1

Melt the chocolate then sift the cocoa powder over it. Mix to combine and set aside.

STEP 2

Pour the heavy cream, milk, salt and half of the sugar in a saucepan. Bring to a simmer.

STEP 3

Whisk the egg yolks with the remaining sugar in a bowl.

STEP 4

Gradually add the melted chocolate to the egg mixture, stirring between each addition.

STEP 5

Slowly pour about 1/4 of the hot liquids over the egg mixture, stirring constantly.

STEP 6

Pour everything back into the saucepan and heat until thickened.

STEP 7

Strain the custard into a large baking pan. Cool down slightly at room temperature then chill.

STEP 8

Churn the chocolate ice cream and freeze it.
