Chocolate Orange Semifreddo

Ingredients

heavy cream orange zest chocolate (53% cocoa) unsweetened cocoa powder 1 large egg 1 large egg yolk sugar orange juice salt

STEP 1

Whip the cold heavy cream until soft-medium peaks form.

STEP 2

Grate the top layer of a washed orange over the whipped cream. Gently fold in and refrigerate.

STEP 3

Melt the coarsely chopped chocolate. 

STEP 4

Sift the cocoa powder over the melted chocolate and mix to combine.

STEP 5

Add a tablespoon of whipped cream to the melted chocolate and combine fully.

STEP 6

Whisk together the egg and egg yolk, sugar, orange juice and salt in a large heatproof bowl.

STEP 7

Place over a pot of simmering water. Keep whipping until the mixture doubles in volume.

STEP 8

Keep beating for about 2 more minutes off the heat. Then gently fold into the melted chocolate.

STEP 9

Once fully combined, gently fold the whipped cream into the chocolate mixture in several additions.

STEP 10

Spoon the chocolate orange semifreddo into silicone molds (or molds lined with plastic wrap).

 Enjoy!

Freeze the chocolate orange semifreddo, covered, for a few hours and serve!
