Craquelin Topping

Ingredients

sugar  flour  salt butter

STEP 1

Mix together the flour, sugar and salt in a small bowl.

STEP 2

Add the butter and mix until a homogeneous dough forms.

STEP 3

Divide into two portions. Roll out to a thickness of about 2 mm (1/16 inch).

STEP 4

Cut circles of desired size with a cookie cutter and chill or freeze until needed.

STEP 5

Pipe choux pastry mounds and top with craquelin then bake.

For chocolate craquelin, simply replace part of the flour with cocoa powder.
