Crème Légère (Lightened Pastry Cream )

Ingredients

milk heavy cream  sugar flour cornstarch egg yolks butter vanilla extract

STEP 1

Sift together the flour and cornstarch through a fine-mesh sieve set over a bowl. Set aside.

STEP 2

Heat the milk, heavy cream and part of the sugar until just simmering.

STEP 3

In the meantime, whisk the egg yolks with the remaining sugar in a bowl until combined.

STEP 4

Add the flour mixture and whisk once more to combine.

STEP 5

Gradually pour the hot liquids over the egg mixture, whisking constantly.

STEP 6

Return to the pot and bring to a boil. Keep whisking to prevent lumps from forming.

STEP 7

When bubbles start forming, keep heating for 2 more minutes

STEP 8

Add the cold butter and vanilla extract and whisk until completely smooth.

STEP 9

Pour into a bowl and place a piece of parchment paper onto the surface. Chill.

STEP 10

Whip the cold heavy cream to medium-stiff peaks.

STEP 11

Remove the pastry cream from the refrigerator and whisk until smooth.

STEP 12

Gently fold the whipped cream into the pastry cream in several additions.
