Apple  Domed Tartlets

These apple domed tartlets are composed of a cinnamon sablé Breton cookie topped with delicious caramel apples. Enjoy!

STEP 1

Cook the apples with butter and honey until tender and fragrant.

STEP 2

Prepare caramel then gradually add hot heavy cream. Cool down slightly before adding bloomed gelatin.

STEP 3

Add the cooked apples and stir to fully coat them with caramel sauce.

STEP 4

Divide evenly between 6 cavities of a large semi sphere silicone mold. Cover and freeze.

STEP 5

Whisk together flour, baking powder, cinnamon and salt in a small bowl. Set aside.

STEP 6

In another bowl, whisk together egg yolks and sugar until lightened in color.

STEP 7

Add softened butter and mix until combined.

STEP 8

Add the flour mixture and mix just until combined. 

STEP 9

Roll out between two sheets of parchment paper then chill. Cut circles using a cookie cutter.

STEP 10

Place on a baking sheet lined with parchment paper. Bake in a preheated oven.

STEP 11

Once the cookies have cooled down, top with a frozen dome. Thaw in the fridge until serving.
