Fluffy Pancakes

Ingredients

milk flour eggs butter, melted sugar baking powder salt vanilla extract

STEP 1

Sift together the flour, sugar, baking powder and salt.

STEP 2

In another bowl, whisk together the milk and eggs. 

STEP 3

Mix in the melted butter and vanilla extract.

STEP 4

Add the wet ingredients to the dry ingredients.

STEP 5

Briefly stir until there are no dry streaks of flour. Don't overmix the batter. Keep it lumpy!

STEP 6

Scoop out about 1/4 cup of batter (per pancake). Pour onto a preheated non-stick pan.

STEP 7

Spread the batter a little into a nice round shape. Cook on medium-low heat. 

STEP 8

Flip the pancake when you see little bubbles popping and the edges have set.

STEP 9

Cook the other side of the pancake until golden brown, 1 to 2 more minutes.
