Mix the eggs and sugar. Then add the orange zest, honey and salt.

Mix until lighter in color and slightly thickened.

Mix in the oil. Then sift the flour and baking powder over the batter.

Pour the melted butter in three additions, mixing in-between.

Add the milk and vanilla extract and whisk just until smooth.

Cover and refrigerate for 24 hours.

Grease the madeleine pan and fill each cavity with a tablespoon of batter.

Refrigerate for an hour then bake.
