Galette des Rois (King Cake)

Ingredients

puff pastry  whole almonds  powdered sugar butter egg amaretto liqueur (or flavoring of choice) egg wash (egg yolk and heavy cream/milk)

STEP 1

Place the almonds and powdered sugar in a small food processor bowl. Process until finely ground.

STEP 2

Add the egg and softened butter and process again until combined.

STEP 3

Mix in the flavoring. Transfer to a piping bag and chill until firm.

STEP 4

Cut the puff pastry into two circles, one slightly bigger than the other.

STEP 5

Pipe the cream over the smaller circle. Spread with the back of a large spoon, if needed.

STEP 6

Place an almond (or trinket) in the cream then cover with the larger circle.

STEP 7

Lightly press down around the cream to seal the edges. Chill for an hour.

STEP 8

Seal the edges of the galette. Brush with egg wash then decorate as desired.

STEP 9

Poke 5 holes in the dough. Bake until golden brown and puffed up.
