Tiropitakia Kourou (Cheese pies)

Ingredients

Greek yogurt vegetable oil butter, diced flour baking powder salt Feta cheese shredded cheese eggs

STEP 1

Mix together the yogurt and oil in a bowl. Set aside.

STEP 2

In a large bowl, whisk together the flour, baking powder and salt. Add the cold butter. 

STEP 3

Rub everything together until the mixture looks like fine breadcrumbs.

STEP 4

Add the yogurt mixture and cheese.

STEP 5

Knead just until combined. Cover and refrigerate while you prepare the filling.

STEP 6

For the filling: Place the Feta cheese in a bowl and break it into small pieces with a fork.

STEP 7

Add the egg and grated cheese. Mix with a fork until creamy.

STEP 8

Divide the dough into 12 equal pieces. Roll each piece into a ball then flatten with your hand.

STEP 9

Spread about one tablespoon of filling in the middle of the dough. Fold in two and seal.

STEP 10

Brush with egg wash or milk. Sprinkle with sesame seeds if desired. 

STEP 11

Bake in the middle of the oven until golden.

 Enjoy!

Use whatever cheese you have/like. Add chopped mint leaves, oregano, thyme!
