Puff Pastry Cream Horns

Ingredients

milk  sugar egg yolks cornstarch butter vanilla extract puff pastry

STEP 1

For the pastry cream: Heat the milk and part of the sugar until just simmering.

STEP 2

Meanwhile, whisk the egg yolks with the remaining sugar until combined.

STEP 3

Add the sifted cornstarch and whisk once more to combine.

STEP 4

Gradually add the hot milk to the egg mixture, whisking constantly.

STEP 5

Pour the mixture back into the pot and cook until thickened, whisking constantly.

STEP 6

Let it boil for 1-2 minutes then remove from the heat. Add the butter and vanilla extract.

STEP 7

Whisk until completely smooth then transfer to a wide container and chill.

STEP 8

For the pastry cones: Using a sharp knife, divide the puff pastry into equally sized strips.

STEP 9

Wrap the dough around the mold, slightly overlapping it.

STEP 10

Brush with a beaten egg and sprinkle with granulated sugar, if desired.

STEP 11

Place on a baking sheet lined with parchment paper. Bake until puffy and golden.

STEP 12

Unmold and cool down completely before filling with pastry cream. Enjoy!
