Namoura (Semolina Cake)

butter semolina (coarse and fine) baking powder baking soda salt plain yogurt sugar lemon juice almonds Optional: rose water  orange blossom water  tahini 

Ingredients

STEP 1

Heat the butter until fully melted.

STEP 2

Add the semolina. Stir with a spoon or spatula until fully combined. 

STEP 3

The mixture will look like wet sand. Cover and let it rest.

STEP 4

Break up all the chunks with a fork. Then mix in the baking powder, baking soda and salt.

STEP 5

In a small bowl, mix together the sugar, yogurt and rose water.

STEP 6

Pour over the semolina mixture and mix with a spatula until smooth.

STEP 7

Transfer to a baking dish coated with tahini (or butter and flour). 

STEP 8

Spread the namoura evenly and smoothen the surface with a spoon or slightly wet hands.

STEP 9

Lightly score the surface with a knife. Press an almond in the center of each slice.

STEP 10

Bake until golden brown then pour syrup over it.

 Enjoy!

Let it rest for an hour before serving, or until all the syrup has been absorbed.
