Vanilla  Pastry Cream

Rich and creamy, vanilla pastry cream is the perfect filling for tarts, cream puffs, eclairs, Boston cream pie and so much more!

Ingredients

flour cornstarch milk heavy cream sugar egg yolks salt butter vanilla extract

Heat together the milk, heavy cream and part of the sugar until just simmering.

Meanwhile, whisk the egg yolks with the salt and remaining sugar in a bowl until combined.

Add the sifted flour and cornstarch. Whisk to combine.

Gradually pour the hot liquid into the egg mixture whisking constantly.

Return the mixture to the saucepan. Cook over medium heat until thickened.

Let it boil for 1 minute then off the heat, whisk in the butter and vanilla extract.
