Ghraybeh

Ingredients

ghee powdered sugar arak or orange blossom water flour shelled pistachios

STEP 1

Mix the cold ghee on medium-low speed until light and fluffy.

STEP 2

Sift the powdered sugar over the ghee. Mix until lighter in color, fluffy and glossy.

STEP 3

Add the flavoring and mix until combined. Scrape the bottom and sides of the bowl.

STEP 4

Gradually sift in the flour, folding it in with a spatula. Mix just until combined.

STEP 5

Divide the dough in two and wrap in cling film or parchment paper. Chill for an hour.

STEP 6

Take out about a teaspoon of dough and roll into a ball. 

STEP 7

Gently press a pistachio on top, flattening the ball. Repeat with the remaining dough.

STEP 8

Bake in the middle of the oven until slightly firm to the touch.
